A small batch vinegar made of drinkable leftover wine, resulting in a fruity, yet versatile vinegar that's great in dressings, marinades, braises or my current favorite, mixed with fresh strawberries and a bit of sugar for the ideal summer treat.

After years at Chez Panisse, Russell Moore and his wife, Allison Hopelain, opened Camino in Oakland, a cult favorite for live-fire California Classics. One of the stars of the show was their in-house red wine vinegar. Small batch and aged in barrels for at least four months, it was so beloved that when Camino closed its doors, bottles of the vinegar were given as parting gifts to friends and family. Camino now offers two types of perfect and versatile Vinegars - Rose and Red, with occasional collaborations.
